Chocolate Chip Oatmeal Peanut Butter Cookies || recipe


One word describes these cookies: amazing. delicious. mouthwatering. OK, that was actually three. ;) As soon as my family tried this recipe, we immediately fell in love with them (well, all of us but dad)!! We can’t understand why he dislikes this recipe and likes our old one (which gets very hard and crumby). These, for the most part, are very moist and chewy. Even though I really don’t like chocolate, these are delicious! :) 
[Note: We normally double this recipe right away since it doesn't make that much.]

The recipe:
½ cup shortening
1 cup white sugar
2/3 cup brown sugar
2 eggs
1 cup peanut butter
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 cup flour
1 cup oatmeal
1 pkg. choc. chips [we use less than a bag for one batch]

Cream shortening and sugars; add eggs and beat until light. Add peanut butter, vanilla and dry ingredients, adding chocolate chips last. Roll into balls. Bake at 350 degrees for 9 minutes. They may seem not quite baked after 9 minutes, but when cooled they will be soft and chewy. Leave cookies on the pan for a short time before removing to cool.

  1. uh, UM! these look so good... AND they make my mouth water. wow. i really would like to make these soon. my dad has diabetes, so we normally try not to have many sweet things around too often, but the peanut butter is good. can't wait, thanks for sharing!!

  6. The cookies look delicious!! I could eat one right now! Miranda is baking brownies for a youth event and the chocolate smells wonderful. But No samples. I think I'd take your cookies above brownies any day! So would Miranda. Love , Aunt Lynette
